Serves 4.
Ingredients
4 hard-boiled eggs, halved
Salt and pepper
2 oz. Ricotta cheese or cream cheese
Pinch of grated nutmeg
1/4 tsp. cayenne pepper
2 Tbsp. grated Parmesan cheese
2 Tbsp. cooked spinach, finely chopped
Method
Remove yolks from the egg halves and put in a small mixing bowl.
Add the cheeses and the spinach.
Beat the mixture until it is smooth.
Season to taste with salt, pepper, and nutmeg.
Spoon into the empty halved egg whites and sprinkle with cayenne pepper.
