Special Souffle

Ingredients

  • 1 oz. confectioners’ sugar

  • 3 eggs

  • 1 oz. butter

  • Flavoring (vanilla, orange, lemon, kirsch, Grand Marnier, etc.)

  • 1 oz. flour

  • 1/4 pt. milk

Method

  1. Melt the butter.

  2. Add the flour and stir well until the mixture bubbles.

  3. Add milk until the mixture boils and continue for 3 minutes.

  4. Remove from heat, then add the sugar and desired flavorings, then beat well.

  5. Separate the yolks of the eggs.

  6. Fold in yolks, 1 at a time.

  7. Whisk egg whites.

  8. Fold in whisked egg whites.

  9. Bake at 350 F for 45 to 50 minutes.
