Ginger Griddle Scone

These ginger-flavored scones are delicious eaten warm, split, and spread thickly with butter.
Ingredients
8 oz plain flour
1 level teaspoon bicarbonate of soda
Pinch of salt
1 level teaspoon ground ginger
2 oz hard margarine
2 oz caster sugar
¼ pint milk
2 level teaspoons cream of tartar
Method
Sift the flour, bicarbonate of soda, salt, and ginger into a bowl.
Rub in the margarine and stir in the sugar.
Dissolve the cream of tartar in the milk and use to bind the mixture to form a soft dough.
Knead with floured hands and divide the dough into two portions on a flowered surface.
Form each portion into a flattened circle and cut into four.
Place the eight scones on a hot griddle or heavy based frying pan and cook for 5 minutes on each side.
Serve warm.
