Chicken In Lemon Sauce

Ingredients

  • 4 chicken breasts, skinned

  • 1 Tbsp. lemon juice

  • 3 oz. butter

  • 3 oz. crumbled hard cheese

  • 1/4 pt. single cream (Lancashire)

  • I Tbsp. sherry

  • Salt and pepper

  • 1 tsp. grated lemon rind

Method

  1. Season chicken with salt and pepper.

  2. Fry in 2 ounces butter for about 15 minutes until golden.

  3. Place in ovenproof dish and bake for 20 minutes at 375 F.

  4. Add sherry and lemon juice and rind to frying pan and cook for 1 minute, stirring.

  5. Slowly add cream, stirring constantly.

  6. Heat but do not allow to boil.

  7. Remove chicken when cooked; pour sauce over.

  8. Dot chicken with remaining butter.

  9. Sprinkle with cheese and grill until golden.
